Programme Overview
This programme aims to upskill employees who are currently employed in a food and beverage service role. The learner will:
- Learn the importance of mise en place in the restaurant area.
- Determine and practice the service sequence in their establishment.
- Gain advanced product and menu knowledge.
- Gain advanced knowledge with regards to various service styles.
- Learn the ins and outs of preparing and serving hot and cold beverages.
- Gain an understanding of alcoholic beverages and their service.
- Gain a detailed understanding of wine and food combinations.
- Learn how to manage their work area and their own personal development.
- Understand the importance of teamwork in the restaurant environment.
Learning Outcomes
At the end of this skills programme and the completion of a portfolio of evidence, the learner will be able to:
- Prepare and clear areas for table service.
- Provide a table service.
- Provide a table drink service.
- Perform basic calculations.
- Develop self within the job role.
- Provide a carvery / buffet service.
- Serve bottled wines.
Workplace Based Learning
Workplace based learning, which is prescribed in the curriculum, takes place under close supervision and according to a roster to complement the theoretical studies. Learners must be permanently employed in an appropriate environment where the relevant subjects can be used and practiced. Suggested establishments for work-based learning: hotel, restaurant, guest house or similar establishments that serve patrons and guests.
Blended Learning
The Oxford Dictionary defines blended learning as a style of education in which students learn via electronic and online media as well as traditional face-to-face teaching.

Full-time In-Service (10 weeks) with 10 contact sessions

Grade 10

Cost will depend on learner/company’s requirements, location (for assessment) and number and computer literacy of learners.
