Programme Overview
In 2012 the QCTO gazetted Chef as a registered Trade in South Africa, which requires a 3-year learning period and a Trade Test. The SA qualification, Occupational Certificate Chef, accredited by QCTO followed by the NAMB Trade Test, is the only recognised chef qualification in South Africa that gives recognition to chefs as artisans practising a trade. The inclusion of Highfield International qualifications give our graduates a further advantage, a passport to the global job market.
Aspiring chefs are provided with a fundamental grounding in all disciplines relating to the production of top-quality cuisine, health and safety measures and the management of a fully operational kitchen. Food and beverage and events management courses are included in the programme to multi-skill these learners. At CHS Hotel School we also emphasise the importance of soft (life) skills to enable learners to fit in at the workplace and eventually progress from commis chefs to executive chefs and emerge as leaders in their trade.
OFQUAL & Highfield International
The Office of Qualifications and Examinations Regulation (OFQUAL) is a global leader in compliance and work-based learning and apprenticeship qualifications and one of the UK’s most recognisable awarding organisations. Highfield International Qualifications offered by CHS Hotel School are regulated by OFQUAL.

Work Integrated Learning
Practical Training Offsite
As a result of our high standards and industry recognition, CHS Hotel School is one of the very few tertiary institutions to guarantee work-integrated learning at a variety of reputable hotels, restaurants, guest houses and conference centres in and around Pretoria. We place, roster, and rotate each student and evaluate off-campus practical training regularly.
Work-integrated learning, which is prescribed in the curriculum, takes place under close supervision and according to a roster to complement theoretical studies and prepare learners for the workplace.
